Watercress Grapefruit Fennel Salad

Simple food has curing power, a way of getting at the core of busyness and chaos and hitting a reset button buried somewhere beneath. It's the ingredients that work well together and take so little effort they feel restorative. Simple food is sharp cheddar on tart granny smith apples, toasted nuts with fresh herbs and olive oil, sliced beets drenched in orange juice.

This simple salad is a blend of some of my favorite early fall flavors, the kind of simple food that beckons pause as each ingredient shares its song. 

Watercress Fennel Grapefruit Salad
peppery watercress + 
crunchy anise-like shaved fennel bulb + fennel frond + 
sweetly biting sliced shallot +
tangy, tart, juicy grapefruit + 
winey, fatty, salty kalamata olives +
sweet and earthy honey

Decorate your plate with watercress, fennel, shallot, grapefruit, and olives. Drizzle honey over everything and enjoy. Mix up the fatty element with avocado instead of olives or add on schmear of goat cheese.
