3. Dukes Coffee Roasters
Since leaving its Chapel Street home for the big city, Dukes has improved its coffee operation.
It was founded by a group of like-minded caffeine addicts fascinated with roasting the greatest coffee, and it takes great satisfaction in the strong ties it has forged with the finest coffee producers in Central and South America, Africa, and Asia.
The cafe located just off Degraves resembles a New York bar from the 1930s, complete with tiled floors and heavily stained wood.
Their beans are responsibly traded and procured without exception, and they are roasted everyday at the company’s headquarters in Richmond.

Market Lane has expanded from a single outlet at Prahran Market in 2009 to seven locations and a roastery in Brunswick East.

5. Small Batch Roasting Co.
Small Batch, an additional pioneer of lighter roasting, originated as the in-house business of the popular North Melbourne cafe Auction Rooms.
In order to focus solely on roasting, the owner Andrew Kelly finally sold the cafe to St Ali.
Small Batch’s raw ingredients are rigorously sourced by sister firm Shared Source, which engages in considerable work on the ground in countries such as Kenya, Colombia, and Guatemala.

6. Patricia Coffee Brewers
Patricia is a specialty cafe that serves city workers and curious guests who want to sample the coffee and flaky baked delicacies displayed on the glass countertop.
Numerous office workers frequent this teeny-tiny cafe. It roasts its own beans at Bureaux Collective, a cooperative roaster in Abbotsford that is favored by a number of prominent coffee shops.
The business has created an online store featuring weekly, three-weekly, monthly, and bimonthly subscriptions for Patricia’s beans, which were previously only available in person.
Australia-wide shipping is $5 only. In an effort to maintain consistency, Patricia often offers only two single-origin filter roasts or two espresso blends at any given time.

Since establishing a roastery at Johnston Street in Collingwood in 2012, Everyday Coffee has become an institution in Melbourne, with a second outlet in the central business district.
It is an in-house roastery serving customers at Everyday as well as their sibling businesses ‘All Are Welcome’ in Northcote, ‘Midtown’ in the city, and other partner merchants.
Their online shop offers two espresso blends. “All Day” is their basic blend, while “Mucho Gusto” is a darker, bolder roast inspired by Italian coffee.
